Mom's Fried Chicken
From Lost Love

1 1/2 C. Buttermilk

1/2 tsp. ground red pepper

3/4 salt

3 lbs. skinned chicken

1 1/2 c panic bread crumbs

1 tsp. grated fresh lemon peel

Pre heat over to 425 degrees. 

In a self-sealing bag, add buttermilk, red pepper, salt and chicken. Refrigerate 1 hour. 

Remove chicken and shake off excess mixture. 

Coat chicken in bread crumbs and lemon peel. 

Place on a greased baking sheet. 

Bake 30-35 minutes or until coating is crips and juices run clear. For browner coating, after chicken is fully cooked, turn oven to broil and broil for 1-2 minutes.

Waylynn's BBQ Chicken Enchiladas

  • 1 Rotisserie Chicken pulled apart into bite size pieces

  • 1 bottle of your favorite BBQ sauce

  • 8oz cream cheese12

  • Flour (or corn or 1/2 corn and 1/2 flour) tortilla 

  • 8oz shredded cheddar cheese

  • One can enchilada sauce

Pre heat over to 350 degrees. 

Mix rotisserie Chicken and mix with BBQ sauce. Save some sauce to pour over top of enchiladas. 

Spread cream cheese on the tortilla, add bbq chicken mixture and sprinkle shredded cheese inside. Roll up and place in a 9x11 baking dish. Once you fill up the baking dish, top with more shredded cheese and pour enchilada sauce over top enchilada's.   Pour the left over bbq sauce on top as well. Bake for 20 minutes or until cheese is melted inside the enchiladas. 

Serves...a lot! Enjoy!

Mitchell's Parmesan Chicken Wings!

  • 1 cup parmesan cheese
  • 1 tsp salt
  • 1 tsp dried parsley flakes
  • 1 tsp paprika
  • 1/2 tsp garlic power
  • 1/2 tsp black pepper
  • 20 chicken wings and drums
  • 1/2 cup butter
1. Coming first 6 ingredients
2. Set the melted butter in a bowl and dip the chicken  pieces first into the butter, then into the cheese mixture to coat 
3. Set on a foil lined baking sheet with edges. 
4. Bake in preheated oven at 350 degrees for about 45 minutes or until fully cooked.

Kristin Myers Christmas Cookies
  • 4 cups Oatmeal
  • 4 tbsp cocoa
  • pinch of salt
  • 1 stick of butter
  • 2/3 cup evaporated milk
  • 2 cups sugar
  • 1 tsp vanilla
Mix oatmeal, cocoa and salt in a large bowl. 
Mix butter, milk, sugar, and vanilla. Cook for 2 minutes then pour in first mixture. 
Drop cookies onto wax paper.

Honey Garlic Salmon from This Love. 
  • 1/3 C. honey
  • 1/4 C. soy sauce
  • 2tbsp lemon juice
  • 1 tsp. red pepper flakes
  • 3 tbsp EVOO divided
  • 4 6-oz salmon filets
  • kosher salt
  • fresh ground pepper 
  • 3 cloves of garlic minced 
  • 1 lemon sliced
  • parsley chopped 
In a medium bowl, whisk together honey, soy sauce, lemon juice and red pepper flakes. 
In a large skillet over medium-high heat, heat two tablespoon oil. when oil is hot, but not smoking, add salmon skin-side up and season with salt and pepper. Cook salmon until deeply golden, about 6 minutes, then flip over and add remaining oil. 
Add garlic to the skillet and cook until fragrant, 1 minute. Add the honey mixture and sliced lemons and cook until sauce is reduced by about 1/3. Baste salmon with the sauce. 
Garnish with sliced lemon and parsley.
